Star« Recipes Continued

Dedicated to the sunshine of truth,

the moonshine of meeting deadlines,

and the starshine of Victoria.

Italian SaladH

       from Nancy Boerboom, sister

         Ghent, Minnesota

2 cups broccoli

2 cups cauliflower

1 pint cherry tomatoes (I use yellow ones too, for color.)

2 jars whole mushrooms

1 can medium pitted black olives

         Top with Italian dressing.

Writes Nancy, "You can add more or less of the veggies to your liking.  Sometimes I also add chopped cucumbers.  This is the recipe that Lori and Paul always want me to bring to family gatherings."

Buttermilk Cookie SaladH

from Sharon Claeys, sister in law

         Marshall, Minnesota

1 cup buttermilk

1 pkg instant vanilla pudding

         Mix together, then add:

1 (8 oz. or 12 oz.) container Cool Whip

1 can mandarin oranges or fruit cocktail, drained

Just before serving, crush 1/2 package of fudge-striped cookies and add to mixture.  You may add 1 banana and miniature marshmallows, walnuts, or cherries, if desired.

Writes Sharon, "I'm sending you a couple recipes that Paulie and I like.  Hope to see you over the holidays."

Buttermilk PancakesH

       from Nancy Boerboom, sister

         Ghent, Minnesota

1 egg beaten

1 cup buttermilk

1 Tbsp sugar

Beat together (I just use a fork), then add:

1 cup flour

1/2 tsp salt

1/2 tsp baking soda

1/2 tsp baking powder

1 glug of majola oil

Writes Nancy, "Here is my pancake recipe that every grandchild loves (and I don't always measure everything).  This probably makes 9 to 10 pancakes, and I have used the whole quart of buttermilk for a big batch."

Slow Cooker Best DipH

       from Nancy Boerboom, sister

         Ghent, Minnesota

8 oz. cream cheese

1 cup shredded mozzarella cheese

2 tsp minced garlic

1/3 cup shredded parmesan cheese

1 14-oz. can artichoke hearts, finely chopped

10 oz. baby spinach, stems removed

Little salt and pepper

Put in slow cooker on high for 2 hours or on low for 4 hours.  Serve with chips, crackers, or bread.

Writes Nancy, "The grandkids always order the spinach/artichoke dip at Applebees and this recipe is as good."
