Breaded Ranch ChickenH from Suzanne Claeys, sister in law Plymouth Meeting, Pennsylvania 3/4 cup crushed cornflakes 3/4 cup grated Parmesan cheese 1 envelope ranch salad dressing mix (not the dip mix) 2 lbs. boneless chicken breast halves 1/2 cup butter or margarine, melted Combine the cornflakes, Parmesan cheese, and salad dressing mix. Dip chicken in butter, then roll in cornflake mixture to coat. Place in a greased baking dish. Bake uncovered at 350 degrees for 45 minutes or until chicken is fully cooked.
Beef JerkyH from Suzanne Claeys, sister in law Plymouth Meeting, Pennsylvania 4 lbs. flank steak or beef round bottom roast, boneless 1 cup soy sauce (I use half low sodium.) 4 Tbsp Worchestershire sauce 3 tsp liquid smoke 2 tsp tabasco sauce 2 tsp onion powder 1 tsp garlic salt 1 tsp garlic powder 1 tsp pepper 2 Tbsp brown sugar Trim excess fat off meet. Slice meat along grain into 1/4" thick strips and about 3 to 4 inches long. Mix the above ingredients. Marinade the sliced meat for approximately 24 hours, stirring occasionally. Pre-heat oven to 170 degrees. Place meat strips on wire racks set inside cookie sheets to catch drippings. Bake for 3 hours, then turn meat pieces and bake for another 3 hours. Some of the thinner pieces may require less baking time. Leave oven door ajar to allow moisture to escape by placing an oven pad in the side of the door. Remove jerky from racks; pat with paper towel and place in airtight containers. Writes Suzanne, "This is a long process, but it is delicious! Happy Holidays."
Cherry Chiffon DessertH from Betty Ann Claeys, mother Ghent, Minnesota 1 can cherry pie filling 1 can sweetened condensed milk (or 1 cup of plain yogurt) 1 (8 oz.) container of Cool Whip 1 (15 oz.) can crushed or tidbits pineapple, drained 1 cup miniature marshmallows Mix all together. Spoon into individual serving dishes or large bowl. Chill for at least 30 minutes. Writes Mom, "Sometimes I sprinkle chopped pecans over the top."
