Several years ago Karel also met the queen of the talk show hosts. "I was on Oprah," she said, almost as an afterthought. "My first granddaughter Zoe was born the third smallest baby that survived in the United States. Zoe weighed 10 ounces at birth. She's going to be nine years old today! Zoe wears hearing aids and glasses but she's just fine." Oprah Winfrey's show that Wednesday afternoon in 2004 was entitled Miracle Babies. Karel added that Celine Dion was on that show also. "She was so nice," said Karel. "During the breaks she'd walk over by her husband and rub his bald head."
Merry Christmas Karel said she learned how to cook by watching her mother and her grandmothers. "I was fortunate to have had grandmothers and a mother who baked and cooked constantly from scratch," said Karel, who admitted that she herself seldom uses an actual recipe. But she has been asked so often for recipes that she was forced to determine in measurements just precisely what she was doing in her kitchen. Now those measurements have been recorded for posterity, for generations of her family, and also for others. Said Karel, "I really enjoy what I do. I get to pick and choose what I do, what I cook, what I bake, what I serve." Thank you, Karel Oddo, for your generous gift of time, your delicious Oriental Chicken Salad, and your treasure of personal recipes. It is easy to see why friends and family like to congregate at your home. Not only is it open and spacious, fabulously designed and decorated, warm and inviting, it features a gracious hostess with hands and heart full of hope and love. When we determine just what's cooking for Christmas at our own homes here in Victoria, we won't want to forget dessert. This one is on page 77 in Karel's Kitchen - Treasured Recipes since 1924.
EASY PECAN PIE 1 cup brown sugar 3/4 cup Karo syrup 3 eggs 1 tsp. vanilla 1 cup chopped pecans 2 T. butter Pastry shell for one pie Pour this into an unbaked pastry shell and bake at 375 degrees for 45 minutes. Merry Christmas to all.
