The Victoria Gazette

When we have bigger fish to fry, we have more important things to do.  When we have little fish to fry, we're not feeling too pressured.  When we have other fish to fry, we put it on the back burner for a while.  When we have more fish to fry, we dig in and getter done!  That's what the Victoria Lions did on Friday evening, March 23rd, when they had more fish to fry.  They dug in and gotter done.

People who come to the Fish Fry see Lions serving up the food and gathering empty plates when the meal is finished.  But much activity occurs in preparation for this annual event during Lent.  It begins with ordering the fish.  Lion President Matt Bergmann said he orders the big food from A&M Processing in Hamburg.  "Commercial fishermen get the fish way up north some place," said Matt.  "It's pollock, a white fish, like cod."

Matt said he ordered 800 pounds of fish, 200 pounds of potato salad, and 200 pounds of beans from A&M.  Other Lions pick up the bread and condiments at area grocery stores.  Matt picked up the frozen fish in Hamburg and brought it to his home at Waconia for the thawing out process.  At 9:00 a.m. on the day of the Fish Fry, Lion Pete Kerber was at the church pushing snow off the parking lot and down Church Hill to accommodate the Cooking Shack and the large coolers of thawed out fish.  The Shack is a portable cooking facility transported to the site of the Fish Fry.  It's maneuvered to the edge of the parking lot, some feet away from the back door of the St. Victoria Catholic Church, which is where the Lions meet and hold events until their Pavilion project across the street is completed.  The Shack is intentionally situated so that the steam and oil spatters are released or vented away from cars in the parking lot.

Around 2:00 p.m. several Victoria Lions were setting up in the parking lot and prepping in the St. Victoria Church Hall .  By 4:15 p.m. hungry customers were already coming through the door.  At 4:30 the Lions were ready to please the crowd.

Lion Treasurer Al Orsen reported the proceeds were very good and that approximately 500 men, women, and children came to eat fish.  Thank you, Victoria Lions, for providing enjoyable events for the community.
